Sweet Potato Tortillas
These tortillas come together with just a few basic ingredients and serve as a tasty vessel for just about anything you can dream up.
SWEET POTATO TORTILLAS | recipe makes 4-6 tortillas
1 cup mashed sweet potato, approximately 1 large-extra large potato
1 cup all purpose flour + extra for adjustments & rolling out * (sub with a cup for cup for GF option)
1 teaspoon kosher salt (I prefer Diamond brand)
1-2 tablespoons good quality avocado or olive oil for cooking
Wash and dry the sweet potato. Use a fork to prick a few holes in the sweet potato.
Preheat oven to 400 degrees. Line a small baking sheet with parchment paper (for easy cleanup). Place sweet potato on baking sheet and bake the potato until tender, about 40 minutes.
Remove the potato from oven and let cool to room temperature, cut the potato in half and scoop the potato flesh into a large bowl, mash until smooth. Add the flour and salt to the mashed potato and bring the ingredients together using a fork or your hands until a dough ball forms.
Separate the dough into 4-6 equal pieces. Roll each piece into a ball. On a lightly floured surface, roll each ball out to an approximately 1/2 cm round.
Cook the tortillas one at a time in a lightly oiled skillet over medium heat until lightly golden brown on both sides, approximately 1-2 minutes per side, until cooked through.

- breakfast tacos: eggs, cheese, veggies, herbs, hot sauce, pickled onions
- snack: any bean hummus w/ tortillas for scooping it up
- lunch wrap: greens, pickled carrots, crispy tofu, cilantro, sprouts
- dinner: pair alongside a hearty soup or stew
Variations: experiment with the many different types of sweet potatoes - Japanese, Jewel, Garnet, Covington, Purple, etc, each has its own flavor profile and unique texture. Keep extra flour on hand as some varieties have more moisture than others, adjust as needed.
No waste tip: don’t toss your potato peel. Rip it up into bite sized pieces, drizzle with a little olive oil, season with salt and your favorite spices and return it to the oven to crisp up a bit. Good for you potato skin chips.
