Hearts & Stars with Fresh Berry Sauce

After a long night of sleeping, little bellies need a wholesome breakfast to get there bodies ready for a day full of play!  In my house, we like to feed the “grumpy bug” (that lives inside little bellies) so she can feel happy and have a good day.

French Toasty Hearts & Stars

Ingredients:

4 slices of whole grain bread (we like to use this wheat/gluten free millet bread for extra nutrition)

Small cookie cutters (hearts and stars are our favorites)

2 Eggs

I tablespoon pure vanilla extract

Dash of cinnamon, to taste

Pinch of sea salt

Directions:

Using cookie cutters, cut shapes out of bread.  Set aside.

In a small bowl, crack the eggs and add vanilla, cinnamon and sea salt.  Whisk to combine.

Dip cutouts into the bread and coat each side.

Add a pat of butter, coconut oil or other in a pan over medium heat.  Cook on each side for several minutes until golden brown.  Plate and serve with Fresh Berry Sauce (see below)!

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

 

Fresh Berry Sauce

Ingredients:

1 cup strawberries, hulled and quartered

1/2 cup blueberries

1/2 teaspoon coconut sugar or honey

Juice of 1 lemon

Directions:

Add berries to a bowl with the sugar and let sit for about 15 minutes, this will help the juices come out of the berries.  Add berries and fresh lemon juice to a blender and puree.  Yes it’s that simple…and very delicious!

This sauce is also delicious swirled in plain yogurt, over pancakes, spread on toast, as a dip for bananas, etc.
